  • 1.5 cups dill pickles, grated
  • 0.5 cup pickle juice (from the dill pickle jar)
  • 0.75 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried dill
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh dill, chopped (optional for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

Stir in the grated carrot and cook for an additional 2-3 minutes until softened.

Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly.

Add the diced potatoes to the pot. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and cook for 15 minutes, or until the potatoes are tender.
