Ingredients

  • 5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 1.25 cups Warm water (about 110°F/43°C)
  • 0.5 cups Milk
  • 0.25 cups Unsalted butter (melted)
  • 2 large Eggs
  • 1 pound Ground beef or pork
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Salt (for filling)
  • 0.5 teaspoon Black pepper (for filling)
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for 5–10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Mix well.

Step 3

In a separate bowl, whisk together the milk, melted butter, and eggs.

Step 4

Pour the yeast mixture and the milk mixture into the flour. Mix until a dough starts to form.

Step 5

Transfer the dough to a floured surface and knead for 8–10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–7 minutes.

Step 6

Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.

Step 7

While the dough rises, prepare the meat filling. In a large skillet, cook the ground meat over medium heat until browned. Add the diced onion and garlic, cooking until softened.

Step 8

Season the meat mixture with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Remove from heat and let it cool completely.

Step 9

Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into 12 equal portions and shape each into a ball.

Step 10

Flatten each ball into a circle about 4 inches in diameter. Place a tablespoon of the meat filling in the center.

Step 11

Pinch the edges of the dough together tightly to seal, forming a bun. Place the buns seam-side down on a parchment-lined baking sheet.

Step 12

Cover the buns with a clean kitchen towel and let them rise for 20–30 minutes.

Step 13

Preheat your oven to 375°F (190°C).

Step 14

Prepare the egg wash by whisking the egg and 1 tablespoon of water together. Brush the tops of the buns with the egg wash for a golden finish.

Step 15

Bake the Perishky in the preheated oven for 20–25 minutes, or until golden brown on top.

Step 16

Remove from the oven and let the buns cool slightly before serving. Enjoy warm!
