Ingredients

  • 6 cups peaches
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar
  • 0.5 cup (1 stick) unsalted butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and slice the peaches into thin wedges, then place them in a medium-sized saucepan.

Step 3

Add 0.5 cup of granulated sugar, 0.5 cup of light brown sugar, lemon juice, ground cinnamon, and ground nutmeg to the saucepan with the peaches. Stir to combine and cook over medium heat for 5-7 minutes, until the sugars dissolve and the peaches release their juices. Remove from heat and set aside.

Step 4

Place the unsalted butter in a 9x13-inch baking dish and transfer the dish to the preheating oven. Allow the butter to melt completely, then carefully remove the dish from the oven.

Step 5

In a mixing bowl, whisk together the all-purpose flour, remaining 0.5 cup granulated sugar, baking powder, and salt. Slowly add the milk and vanilla extract to the dry ingredients, stirring until a smooth batter forms.

Step 6

Pour the batter evenly over the melted butter in the baking dish. Do not stir.

Step 7

Spoon the cooked peach mixture (including the juices) evenly over the batter. Again, do not stir; the batter will rise to the top during baking.

Step 8

Bake the cobbler in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.

Step 9

Remove the cobbler from the oven and allow it to cool for at least 10 minutes before serving.

Step 10

Serve warm, optionally with a scoop of vanilla ice cream on top.
