Ingredients

  • 6 tablespoons butter
  • 1 large yellow onion, finely chopped
  • 3 stalks celery, finely chopped
  • 3 tablespoons fresh parsley, chopped
  • 8 cups French or Italian bread, cubed
  • 1 pint oysters, shucked with liquid reserved
  • 1 cup chicken stock
  • 1.5 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 large eggs, beaten
  • 1 tablespoon olive oil or butter (for greasing the baking dish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or butter and set aside.

Step 2

Melt the butter in a large skillet over medium heat. Add the chopped onion and celery, and cook for 5-7 minutes until softened and translucent. Stir in the chopped parsley and cook for an additional minute. Remove from heat.

Step 3

In a large mixing bowl, combine the cubed bread, sautéed onion and celery mixture, and the seasonings (sage, thyme, rosemary, salt, and black pepper). Toss to evenly distribute the flavors.

Step 4

Roughly chop the oysters and add them to the bread mixture along with their reserved liquid. Pour in the chicken stock and beaten eggs. Stir gently with a wooden spoon or your hands until the mixture is evenly moistened but not soggy.

Step 5

Transfer the mixture to the prepared baking dish, spreading it evenly. Cover with aluminum foil and bake in the preheated oven for 30 minutes.

Step 6

After 30 minutes, remove the aluminum foil and continue to bake for an additional 15 minutes or until the top is golden brown and slightly crispy.

Step 7

Remove from the oven and let it rest for 5 minutes before serving warm.
