Ingredients

  • 16 ounces fresh shucked oysters with their liquor
  • 30 pieces saltine crackers
  • 8 tablespoons unsalted butter
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons paprika
  • 1 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish and set it aside.

Step 2

Crush the saltine crackers into fine crumbs using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin. Set the crumbs aside.

Step 3

In a medium saucepan over medium heat, melt 6 tablespoons of butter. Add the flour and whisk continually to make a roux. Cook for 1-2 minutes until slightly golden.

Step 4

Gradually whisk in the milk and cream, stirring constantly to create a smooth sauce. Add the Worcestershire sauce, salt, pepper, and paprika. Stir well and allow the sauce to thicken slightly, about 2-3 minutes. Remove from heat.

Step 5

Drain the oysters, reserving their liquor. Strain the liquor through a fine mesh sieve to remove any sand or grit, then stir it into the butter sauce.

Step 6

Spread a thin layer of the butter sauce over the bottom of the prepared baking dish. Follow with an even layer of crushed crackers, then a layer of oysters. Repeat the layers until all oysters, crackers, and sauce are used, finishing with a layer of crackers on top.

Step 7

Melt the remaining 2 tablespoons of butter and drizzle it over the top layer of crackers.

Step 8

Bake the casserole in the preheated oven for 25-30 minutes, or until bubbly and the top is golden brown.

Step 9

Remove the casserole from the oven and let it cool for 5-10 minutes before serving. Sprinkle chopped parsley over the top for garnish.

Step 10

Serve warm as a main course or side dish. Enjoy!
