Ingredients

  • 2 cups Elbow macaroni
  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 14.5-ounce can Canned diced tomatoes
  • 1 8-ounce can Tomato sauce
  • 1 cup Frozen mixed vegetables (peas, carrots, corn)
  • 1.5 cups Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried Italian seasoning
  • 1 tablespoon Olive oil (for cooking)
  • 4 quarts Water (for boiling pasta)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

Bring a large pot of salted water (4 quarts) to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the ground beef to the skillet and cook until fully browned, breaking it apart with a spatula. Drain any excess fat from the skillet.

Step 5

Stir in the canned diced tomatoes (undrained) and tomato sauce. Add the frozen mixed vegetables, salt, black pepper, and Italian seasoning. Simmer for 5 minutes.

Step 6

Combine the cooked macaroni with the beef and vegetable mixture, stirring well to coat everything evenly.

Step 7

Pour the mixture into the prepared casserole dish. Spread it out evenly, then sprinkle the shredded cheddar cheese over the top.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it sit for 5 minutes before serving.

Step 10

Serve warm and enjoy!
