  • 2 cups Cooked white rice
  • 1 cup Chicken breast (diced)
  • 0.5 cup Onion (finely chopped)
  • 0.25 cup Carrot (diced)
  • 0.25 cup Frozen peas
  • 3 tablespoons Ketchup
  • 1 tablespoon Soy sauce
  • 2 tablespoons Vegetable oil
  • 4 Eggs
  • 2 tablespoons Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter
  • 1 teaspoon Parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Sauté the onion and carrot for 2-3 minutes until softened.

Step 2

Add the diced chicken breast to the skillet and sauté until cooked through, about 5-6 minutes.

Step 3

Stir in the frozen peas, then add the cooked rice. Mix well to combine.

Step 4

Add 3 tablespoons of ketchup and 1 tablespoon of soy sauce to the mixture. Stir and cook for another 2-3 minutes until evenly coated and heated through. Season with a pinch of salt and black pepper. Transfer the fried rice to a plate and shape it into a mound or oval.
