Ingredients

  • 2 lbs beef chuck (cut into 1-inch cubes)
  • 0.25 cups all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion (diced)
  • 3 garlic cloves (minced)
  • 4 cups beef broth
  • 3 tbsp tomato paste
  • 1.5 tbsp Worcestershire sauce
  • 2 bay leaves
  • 4 medium carrots (peeled and cut into chunks)
  • 3 large russet potatoes (peeled and diced)
  • 3 celery stalks (chopped)
  • 1 cups frozen peas
  • 2 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

In a large bowl, toss the beef cubes with the flour, salt, and black pepper until evenly coated.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Working in batches, sear the beef cubes in the hot oil until browned on all sides. Remove the beef and set aside on a plate.

Step 4

In the same pot, add the diced onion and cook for about 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute, stirring frequently to avoid burning.

Step 5

Return the beef to the pot along with the beef broth, tomato paste, Worcestershire sauce, and bay leaves. Stir to combine, then bring the mixture to a simmer.

Step 6

Lower the heat to maintain a gentle simmer, cover the pot with a lid, and let cook for 1 hour, stirring occasionally.

Step 7

After 1 hour, add the carrots, potatoes, and celery to the pot. Stir well, cover, and cook for an additional 40-45 minutes until the vegetables are tender.

Step 8

Add the frozen peas and cook for another 5 minutes.

Step 9

Remove the bay leaves and taste the stew. Adjust seasoning with additional salt and pepper, if needed.

Step 10

Serve hot, garnished with chopped fresh parsley, and enjoy with crusty bread or over freshly cooked rice.
