Ingredients

  • 4 pounds beef brisket
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 yellow onions, sliced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 4 carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 4 medium potatoes, quartered
  • 3 celery stalks, cut into chunks
  • 2 bay leaves

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Pat the beef brisket dry with paper towels, then season both sides with salt, black pepper, and paprika.

Step 3

In a large, heavy oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the brisket on both sides until browned, about 4-5 minutes per side. Remove the brisket and set it aside.

Step 4

In the same pot, add the sliced onions and cook until softened and slightly caramelized, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Step 5

Stir in the beef broth and tomato paste, scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer.

Step 6

Return the brisket to the pot, ensuring it's partially submerged in the liquid. Arrange the carrots, parsnips, potatoes, and celery around the brisket. Add the bay leaves.

Step 7

Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.

Step 8

Cook the brisket for 3-4 hours, or until it's fork-tender. Check periodically to ensure the liquid hasn't reduced too much; if it has, add a bit more broth or water.

Step 9

Once cooked, carefully remove the brisket and vegetables from the pot. Let the brisket rest for 10-15 minutes before slicing against the grain.

Step 10

Serve the sliced brisket with the vegetables and spoon the flavorful cooking liquid over the top.
