Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cup Brown sugar, packed
  • 0.25 cup Vegetable oil (or melted butter)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Optional: Raisins or chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a medium-sized bowl, combine the rolled oats and milk. Let the mixture sit for 10 minutes to soften the oats.

Step 3

In a separate large bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.

Step 4

After the oats have softened, stir in the brown sugar, vegetable oil (or melted butter), egg, and vanilla extract until well mixed.

Step 5

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix the batter.

Step 6

If desired, fold in the raisins or chocolate chips for added flavor.

Step 7

Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
