Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1.25 cups Boiling water
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1 cup Brown sugar (packed)
  • 2 large Eggs
  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Shredded coconut (sweetened)
  • 0.5 cup Chopped pecans or walnuts
  • 0.5 cup Brown sugar (for topping)
  • 4 tablespoons Unsalted butter (for topping)
  • 3 tablespoons Heavy cream or evaporated milk

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan, or line it with parchment paper.

Step 2

In a medium bowl, combine the rolled oats and boiling water. Let sit for 20 minutes to allow the oats to soften.

Step 3

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar using a hand or stand mixer until light and fluffy.

Step 4

Add the eggs to the butter-sugar mixture one at a time, mixing well after each addition.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.

Step 6

Gradually add the dry ingredients to the wet mixture, alternating with the softened oats. Mix until just combined.

Step 7

Pour the batter into the prepared 9x13-inch pan and smooth it out evenly.

Step 8

Bake for 35–40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

While the cake is baking, prepare the topping. In a saucepan over medium heat, combine the shredded coconut, chopped pecans, brown sugar, butter, and heavy cream. Stir until the mixture is melted and smooth, then remove from heat.

Step 10

Once the cake is fully baked, remove it from the oven and immediately spread the topping evenly over the cake.

Step 11

Switch your oven to the broil setting. Place the cake under the broiler for 2–3 minutes, or until the topping is bubbly and golden brown. Be sure to watch carefully to avoid burning.

Step 12

Allow the cake to cool slightly before serving. Enjoy warm or at room temperature.
