Ingredients

  • 1 cup Rolled oats
  • 2 cups Boiling water
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water (110-115°F)
  • 0.5 cup Honey
  • 2 tablespoons Butter, softened
  • 2 teaspoons Salt
  • 4.5 cups All-purpose flour
  • 1 teaspoon Vegetable oil
  • 2 tablespoons Optional rolled oats for garnish

Directions

Step 1

In a large mixing bowl, add the rolled oats and pour boiling water over them. Stir well and let it cool to lukewarm, about 10-15 minutes.

Step 2

In a small bowl, dissolve the active dry yeast in warm water (110-115°F). Let it sit for 5-10 minutes until foamy.

Step 3

Once the oat mixture has cooled, stir in honey, softened butter, and salt.

Step 4

Add the yeast mixture to the oat mixture and stir to combine.

Step 5

Gradually add the all-purpose flour, 1 cup at a time, mixing with a wooden spoon or using a dough hook in a stand mixer. Continue until a sticky yet manageable dough forms.

Step 6

Turn the dough out onto a floured surface and knead for 8-10 minutes by hand, or knead in a stand mixer for 5-6 minutes, until the dough is smooth and elastic.

Step 7

Lightly oil a large bowl with the vegetable oil. Place the dough in the bowl, turning it to coat it with oil, then cover the bowl with a clean kitchen towel. Let the dough rise in a warm place for 1 hour or until it has doubled in size.

Step 8

Punch the dough down to release air bubbles. Divide it into 2 equal portions and shape into loaves.

Step 9

Place each loaf into a greased 9x5-inch loaf pan. Cover the pans loosely with a kitchen towel and let them rise for another 30-40 minutes, or until the dough rises about 1 inch above the edge of the pans.

Step 10

Preheat your oven to 375°F (190°C). If desired, lightly brush the tops of the loaves with water and sprinkle with rolled oats for garnish.

Step 11

Bake the loaves in the preheated oven for 35-40 minutes, or until the tops are golden brown and the bread sounds hollow when tapped.

Step 12

Remove the loaves from the pans and cool completely on a wire rack before slicing. Enjoy!
