Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup Milk
  • 0.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 2 tablespoons Unsalted butter, melted
  • 1 tablespoon Honey or sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter or oil for greasing

Directions

Step 1

In a large bowl, combine the rolled oats and milk. Let the mixture soak for 5-10 minutes to allow the oats to soften.

Step 2

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 3

Add the egg, melted butter, honey (or sugar), and vanilla extract to the soaked oats and milk mixture. Stir until well combined.

Step 4

Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Heat a griddle or nonstick skillet over medium heat. Lightly grease the surface with butter or oil.

Step 6

Scoop about 1/4 cup of batter onto the griddle for each griddle cake. Spread the batter slightly with the back of a spoon to form even circles.

Step 7

Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the cakes and cook for another 2-3 minutes, or until golden brown and cooked through.

Step 8

Transfer cooked griddle cakes to a plate and keep warm. Repeat with the remaining batter, greasing the griddle as needed.

Step 9

Serve the griddle cakes warm with your favorite toppings, such as maple syrup, fresh fruit, yogurt, or a sprinkling of nuts.
