Ingredients

  • 3 cups Oat flour
  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 large Egg
  • 2 teaspoons Pure vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 2 tablespoons Milk (as needed)
  • 1 cup Powdered sugar (optional, for dusting or icing)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, using a hand or stand mixer on medium speed.

Step 3

Beat in the egg and pure vanilla extract until fully incorporated.

Step 4

In a separate bowl, whisk together the oat flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. If the dough feels too dry to come together, add milk one tablespoon at a time until the dough is cohesive and pliable.

Step 6

Divide the dough into two portions. Wrap each portion in plastic wrap and refrigerate for 30 minutes to make the dough easier to roll out.

Step 7

On a lightly floured surface or between two pieces of parchment paper, roll out one portion of the chilled dough to about 1/4 inch thickness.

Step 8

Use your favorite cookie cutters to cut out shapes, then carefully transfer the cut-outs to the prepared baking sheets, leaving about 1 inch of space between each cookie.

Step 9

Repeat with the second portion of dough, gathering and re-rolling scraps as needed to minimize waste.

Step 10

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden. Be careful not to overbake, as oat flour cookies can become dry.

Step 11

Remove the cookies from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 12

If desired, dust the cooled cookies with powdered sugar or decorate them with your favorite icing.

Step 13

Store the cookies in an airtight container at room temperature for up to one week. Enjoy!
