Ingredients

  • 2 cups prepared mincemeat (store-bought or homemade)
  • 2.5 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 0.5 teaspoons salt
  • 1 cup unsalted butter (chilled and cubed)
  • 0.5 cup shortening (chilled)
  • 6 tablespoons ice water
  • 1 unit egg (beaten, for egg wash)
  • 1 tablespoon milk

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, and salt. Whisk to blend.

Step 2

Add the chilled, cubed butter and shortening to the dry ingredients. Use a pastry cutter or your fingers to cut the fats into the flour mixture until it resembles coarse crumbs.

Step 3

Drizzle in the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together (you may not need all the water).

Step 4

Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat the oven to 400°F (200°C).

Step 6

On a lightly floured surface, roll out one disk of dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate, pressing lightly to fit the pie plate without stretching the dough.

Step 7

Trim any excess dough hanging over the edge, leaving about 1/2-inch overhang.

Step 8

Fill the pie shell with the prepared mincemeat, spreading evenly.

Step 9

Roll out the second disk of dough to a 12-inch circle. Lay it over the pie filling.

Step 10

Trim the edges of the top crust to match the bottom crust, and crimp them together to seal.

Step 11

Cut small slits in the top crust to allow steam to escape. Alternatively, create a lattice design with the top crust.

Step 12

In a small bowl, whisk the beaten egg with the milk to make an egg wash. Brush it over the top crust for a golden finish.

Step 13

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 14

Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving.
