Ingredients

  • 3 cups all-purpose flour
  • 1 cup unsalted butter
  • 1 teaspoon salt
  • 0.5 cup cold water
  • 1 pound ground beef
  • 1 onion, finely diced
  • 1 carrot, finely diced
  • 0.5 cup frozen peas
  • 2 cloves garlic, minced
  • 0.5 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon black pepper
  • 1 egg, beaten

Directions

Step 1

Prepare the pie dough: In a large bowl, combine the all-purpose flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 2

Gradually add the cold water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 3

While the dough chills, prepare the filling: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon.

Step 4

Add the diced onion, carrot, and garlic to the skillet. Cook for 5-7 minutes until the vegetables are softened.

Step 5

Stir in the tomato paste, Worcestershire sauce, black pepper, and beef broth. Simmer for 5-7 minutes until the mixture thickens slightly. Stir in the frozen peas, then remove from heat and let cool.

Step 6

Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

Step 7

Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Use a round cutter (about 5 inches in diameter) to cut out circles of dough.

Step 8

Place a heaping tablespoon of the cooled meat filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Press the edges firmly with a fork to seal.

Step 9

Transfer the meat pies to the baking sheets. Brush the tops with the beaten egg to create a golden crust.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and flaky.

Step 11

Allow to cool slightly before serving. Enjoy warm, or store in an airtight container to reheat later.
