Ingredients

  • 4 large Russet potatoes
  • 4 large Hard-boiled eggs
  • 1 cup Mayonnaise
  • 2 tablespoons Yellow mustard
  • 1 cup Dill pickles
  • 2 stalks Celery
  • 0.5 medium Red onion
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Chives (optional, for garnish)

Directions

Step 1

Peel and dice the russet potatoes into evenly-sized chunks for even cooking.

Step 2

Place the diced potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, peel and dice the hard-boiled eggs, chop the dill pickles, celery, and red onion into small pieces.

Step 4

Once the potatoes are cooked, drain them thoroughly and transfer to a large mixing bowl. Mash the potatoes until smooth (or leave slightly chunky for texture, if preferred).

Step 5

Add the mayonnaise, yellow mustard, salt, and black pepper to the mashed potatoes, stirring to combine into a creamy mixture.

Step 6

Fold in the diced eggs, pickles, celery, and red onion, mixing gently to avoid over-mixing. Adjust seasoning to taste, if needed.

Step 7

Transfer the potato salad to a serving dish. Sprinkle paprika on top for a pop of color and garnish with chopped chives (if using).

Step 8

Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Serve chilled and enjoy!
