Ingredients

  • 400 grams elbow macaroni
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil and cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of unsalted butter over medium heat.

Step 4

Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 5

Gradually pour in the milk and heavy cream, whisking constantly to prevent lumps. Cook for 4-5 minutes or until the mixture thickens.

Step 6

Stir in the cheddar cheese and Parmesan cheese until fully melted and smooth. Season with salt, black pepper, and paprika.

Step 7

Add the cooked macaroni to the cheese sauce and stir to combine, ensuring every piece of pasta is coated.

Step 8

Transfer the macaroni and cheese mixture to a greased 9x13-inch baking dish and spread it evenly.

Step 9

In a small bowl, combine the panko breadcrumbs and olive oil. Sprinkle this mixture over the top of the macaroni.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the topping is golden brown and crispy.

Step 11

Remove from the oven and let it cool for 5 minutes before serving.

Step 12

Optionally, garnish with chopped parsley for a burst of color and freshness.
