Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 0.25 cup olive oil
  • 0.25 cup fresh lemon juice
  • 2 tablespoons white wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a medium pot of salted water to a boil.

Step 2

Add the shrimp to the pot and cook for 2-3 minutes, or until pink and opaque. Do not overcook.

Step 3

Drain the shrimp and immediately transfer them to a bowl of ice water to stop the cooking process. Let them sit for 5 minutes, then drain and pat the shrimp dry with paper towels.

Step 4

In a large mixing bowl, whisk together olive oil, lemon juice, white wine vinegar, minced garlic, honey, parsley, Dijon mustard, red pepper flakes, salt, and black pepper to make the marinade.

Step 5

Add the cooked and cooled shrimp to the marinade, tossing to coat evenly.

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight, for the flavors to fully develop.

Step 7

Stir the shrimp occasionally while marinating to ensure all pieces are well-coated.

Step 8

Serve chilled as an appetizer, over a salad, or alongside crusty bread. Enjoy!
