Ingredients

  • 4 large ripe mangoes
  • 1 cup granulated sugar
  • 0.5 cup white vinegar
  • 2 tbsp, grated fresh ginger
  • 2 cloves, minced garlic
  • 0.5 tsp red chili flakes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cinnamon stick
  • 1 tsp mustard seeds
  • 0.5 cup water
  • 1 tsp salt

Directions

Step 1

Peel the mangoes, remove the pits, and dice the flesh into small cubes.

Step 2

In a large saucepan or pot, combine the diced mangoes, granulated sugar, white vinegar, and water. Stir well.

Step 3

Add the grated ginger, minced garlic, red chili flakes, ground cumin, ground coriander, and salt to the pot. Mix everything thoroughly.

Step 4

Drop in the cinnamon stick and mustard seeds, ensuring they are submerged in the liquid.

Step 5

Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.

Step 6

Once boiling, reduce the heat to low and let the chutney simmer for 35-40 minutes. Stir occasionally to prevent burning and ensure even cooking.

Step 7

As the chutney cooks, it will thicken and the mangoes will break down. Use the back of a spoon to mash some of the mango pieces for a smoother consistency, leaving some chunks for texture.

Step 8

Taste and adjust seasoning if needed, adding more salt or chili flakes for flavor balance.

Step 9

Once the chutney has reached a jam-like consistency, remove the cinnamon stick and let the chutney cool to room temperature.

Step 10

Transfer the chutney to sterilized glass jars and store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.
