  • 1 piece Pie crust (9-inch, pre-made or homemade)
  • 1 cup Granulated sugar

  • 3 large Egg yolks (beaten)
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Lemon zest
  • 0.5 cup Fresh lemon juice
  • 3 large Egg whites
  • 0.25 teaspoon Cream of tartar
  • 6 tablespoons Granulated sugar (for meringue)

Directions

Step 1

Preheat the oven to 350°F (175°C). Blind bake the pie crust if it is not already baked. Let it cool completely.

Step 2

In a medium saucepan, whisk together 1 cup of sugar, cornstarch, flour, and salt. Gradually stir in 2 cups of water while whisking to avoid lumps.

Cook the mixture over medium heat, stirring constantly, until it becomes thick and bubbly. Reduce heat and cook for an additional 2 minutes while stirring.

Remove the saucepan from the heat. Slowly whisk a few spoonfuls of the hot mixture into the beaten egg yolks to temper them, then mix the egg yolk mixture back into the saucepan.
