Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup celery, finely diced
  • 0.5 cup red bell pepper, finely diced
  • 0.25 cup red onion, finely diced
  • 3 pieces hard-boiled eggs, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente, about 8 minutes. Drain and rinse the macaroni under cold water to cool it completely and stop the cooking process. Set aside.

Step 2

In a large mixing bowl, whisk together the mayonnaise, sour cream, yellow mustard, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.

Step 3

Add the cooked and cooled macaroni, diced celery, red bell pepper, red onion, chopped hard-boiled eggs, and parsley to the bowl with the dressing. Gently toss everything until evenly coated and well mixed.

Step 4

Taste and adjust the seasoning as needed by adding more salt or pepper.

Step 5

Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour to let the flavors meld together.

Step 6

Before serving, give the salad a quick stir and garnish with additional parsley if desired. Serve chilled and enjoy!
