Ingredients

  • 16 ounces elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk
  • 3 cups sharp cheddar cheese, shredded
  • 1.5 cups Gouda cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 0.25 teaspoons paprika (optional, for garnish)
  • 1 cup panko breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

Step 3

In a large saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour and cook for 1-2 minutes to form a roux, stirring constantly.

Step 4

Gradually pour in the whole milk while whisking to avoid lumps. Continue to cook, stirring frequently, until the mixture thickens into a smooth white sauce, approximately 5-7 minutes.

Step 5

Reduce the heat to low and add the sharp cheddar cheese, Gouda cheese, and Parmesan cheese, stirring until fully melted and incorporated.

Step 6

Season the cheese sauce with salt and ground black pepper. Taste and adjust seasoning if necessary.

Step 7

Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated. Pour the mixture into the prepared baking dish, spreading it evenly.

Step 8

In a small bowl, combine the panko breadcrumbs and olive oil. Mix until the breadcrumbs are lightly coated. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.

Step 9

Optionally, sprinkle a light dusting of paprika over the top for added color and flavor.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the edges are bubbly.

Step 11

Remove from the oven and let rest for 5 minutes before serving. Enjoy your homemade Mom's Macaroni and Cheese!
