  • 1 cup Gruyere cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1.5 cups panko breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Cook the macaroni in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1–2 minutes, stirring constantly, to form a roux.

Reduce the heat to low and stir in the shredded cheddar, Monterey Jack, Gruyere, and Parmesan cheeses (reserve ½ cup of the cheddar for topping). Stir until the cheese melts and the sauce becomes smooth.

Add the Dijon mustard, garlic powder, paprika, salt, and black pepper to the cheese sauce. Mix well.
