Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 tsp paprika
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter (melted)
  • 2 tbsp fresh parsley (chopped, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 4

Slowly whisk in the milk and heavy cream, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

Step 5

Reduce the heat to low and stir in the shredded cheddar, mozzarella, Parmesan cheese, salt, black pepper, and paprika. Stir until all the cheese is melted and the sauce is smooth.

Step 6

Add the cooked macaroni to the cheese sauce and toss until evenly coated. Transfer the mixture to the prepared baking dish and spread it out evenly.

Step 7

In a small bowl, combine the panko breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the macaroni and cheese.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 9

Remove from the oven and let cool for a few minutes before serving. Garnish with chopped fresh parsley, if desired.
