  • 0.25 cup Cornstarch
  • 0.25 teaspoon Salt
  • 1.5 cups Water
  • 3 items Large egg yolks
  • 0.5 cup Fresh lemon juice

  • 2 tablespoons Unsalted butter
  • 1 cup Whipped cream (optional for topping)

Directions

Step 1

In a medium saucepan, whisk together the sugar, cornstarch, and salt.

Gradually whisk in the water until the mixture is smooth and free of lumps.

Step 3

Cook the mixture over medium heat, constantly whisking, until it thickens and begins to bubble.

Pour the lemon filling into the graham cracker crust, smoothing the top with a spatula.

Step 8

Allow the pie to cool at room temperature for about 30 minutes, then transfer it to the refrigerator to chill for at least 3 hours or until fully set.

Step 9

When ready to serve, optionally top the pie with whipped cream for extra richness.

Step 10

Slice and enjoy!
