Ingredients

  • 1 cup Unsalted butter
  • 0.5 cup Granulated sugar
  • 2 cups All-purpose flour (for crust)
  • 4 large Eggs
  • 1.5 cups Granulated sugar (for filling)
  • 0.25 cup All-purpose flour (for filling)
  • 0.66 cup Freshly squeezed lemon juice
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.

Step 2

In a medium bowl, cream together the butter and 1/2 cup granulated sugar until light and fluffy.

Step 3

Mix in 2 cups of all-purpose flour to form a crumbly dough.

Step 4

Press the dough evenly into the prepared pan to form a firm crust.

Step 5

Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden. Remove from the oven and let cool slightly.

Step 6

While the crust is baking, prepare the filling: In a separate bowl, whisk together the eggs, 1 1/2 cups granulated sugar, 1/4 cup flour, and 2/3 cup lemon juice until smooth and well combined.

Step 7

Pour the lemon mixture over the warm crust, spreading it evenly.

Step 8

Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles in the center.

Step 9

Remove the lemon bars from the oven and let them cool completely in the pan on a wire rack.

Step 10

Once cooled, dust the top with powdered sugar for a finishing touch.

Step 11

Cut into 16 squares and serve. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
