  • 3 cloves garlic, minced
  • 28 ounces diced tomatoes (canned)
  • 15 ounces tomato sauce
  • 15 ounces kidney beans (drained and rinsed)
  • 15 ounces pinto beans (drained and rinsed)
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups beef broth
  • 1 tablespoon olive oil

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 3

Add the minced garlic and cook for 1-2 minutes until fragrant.

Step 4

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 7-8 minutes.

Step 5

Drain any excess grease from the pot if necessary.

Step 6

Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and black pepper, coating the beef mixture in the spices.

Step 7

Add the canned diced tomatoes, tomato sauce, kidney beans, pinto beans, and beef broth to the pot.

Step 8

Stir well to combine all the ingredients and bring the mixture to a boil.

Step 9

Once boiling, reduce the heat to low and let the chili simmer uncovered for 60-75 minutes, stirring occasionally to prevent sticking.

Step 10

Taste and adjust seasoning as needed before serving.

Step 11

Serve hot with your favorite toppings, such as shredded cheese, sour cream, diced green onions, or crackers.
