  • 28 ounces canned diced tomatoes (with juices)
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Add the diced onion and sauté for 5 minutes, or until softened and translucent.
