Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1 cup raw pecans, roughly chopped
  • 0.5 cup unsweetened shredded coconut
  • 0.5 cup pumpkin seeds (pepitas)
  • 0.5 cup sunflower seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 0.5 cup dried cranberries (or raisins)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, chopped pecans, shredded coconut, pumpkin seeds, sunflower seeds, ground cinnamon, and salt. Stir well to distribute the ingredients evenly.

Step 3

In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

Step 4

Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly to ensure the dry ingredients are evenly coated with the wet mixture.

Spread the granola mixture evenly onto the prepared baking sheet in a thin, even layer.
