Ingredients

  • 12 pounds Whole turkey
  • 1 cup Unsalted butter
  • 2 tablespoons Salt
  • 1 tablespoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme
  • 8 cups White bread (cubed)
  • 3 cups Chicken or turkey stock
  • 1 cup Celery (diced)
  • 1 cup Onion (diced)
  • 1 teaspoon Sage
  • 2 tablespoons Parsley (chopped)
  • 2 large Eggs (beaten)
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Ensure the turkey is completely thawed if using a frozen bird. Remove the giblets and neck from the cavity and pat the turkey dry with paper towels.

Step 3

Rub the turkey with 1/2 cup of melted butter, covering the skin entirely. Season the turkey generously with salt, black pepper, garlic powder, and onion powder.

Step 4

Place the fresh rosemary and thyme sprigs inside the turkey cavity, then set the turkey on a roasting pan with a rack.

Step 5

Roast the turkey in the preheated oven. Plan for approximately 15 minutes per pound, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C). Baste every 30 minutes with pan drippings.

Step 6

While the turkey is roasting, prepare the dressing. In a large skillet, heat the olive oil over medium heat. Sauté the diced celery and onion until soft, about 5–7 minutes.

Step 7

In a large mixing bowl, combine the cubed bread, sautéed celery and onion, 1 teaspoon of sage, chopped parsley, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and beaten eggs.

Step 8

Gradually pour in the chicken or turkey stock until the consistency is moist but not overly wet.

Step 9

Grease a 9x13-inch baking dish and transfer the dressing mixture into it. Cover with aluminum foil.

Step 10

Bake the dressing alongside the turkey for the last 40 minutes of roasting, removing the foil for the final 10–15 minutes for a crisp top.

Step 11

Once the turkey is done, tent it loosely with foil and let it rest for 20–30 minutes before carving.

Step 12

Serve the turkey slices alongside the dressing and enjoy the holiday feast!
