Ingredients

  • 1 kg Mutton (bone-in, cut into small pieces)
  • 1 cup Fresh coriander leaves
  • 0.5 cup Fresh mint leaves
  • 6 pieces Green chilies
  • 6 pieces Garlic cloves
  • 2 tablespoons Ginger
  • 2 large Onions (finely chopped)
  • 2 medium Tomatoes (pureed)
  • 0.5 cup Curd (yogurt, whisked)
  • 3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper powder
  • 2 cups Water

Directions

Step 1

Wash the mutton pieces thoroughly and set aside.

Step 2

In a blender, combine coriander leaves, mint leaves, green chilies, garlic cloves, and ginger. Blend into a smooth paste with a splash of water if needed. This is the green masala.

Step 3

Heat oil in a large pan or pressure cooker over medium heat. Add cumin seeds and let them splutter.

Step 4

Add finely chopped onions and sauté until golden brown.

Step 5

Stir in the green masala paste and cook for 3-4 minutes until the oil begins to separate.

Step 6

Add the pureed tomatoes and cook for another 5-7 minutes, stirring occasionally.

Step 7

Mix in turmeric powder, coriander powder, black pepper powder, and salt. Cook for 1-2 minutes.

Step 8

Add the mutton pieces and stir well to coat the meat with the masala. Cook for 8-10 minutes, stirring occasionally.

Step 9

Add whisked curd to the pan and mix well. Cook for another 5-7 minutes, allowing the flavors to meld together.

Step 10

Pour in water, cover, and let it simmer for 45 minutes on low heat until the mutton is tender. If using a pressure cooker, cook for 4-5 whistles and allow the pressure to release naturally.

Step 11

Check the seasoning and adjust salt if necessary. Garnish with a few additional coriander leaves.

Step 12

Serve hot with steamed rice, paratha, or naan bread for a comforting meal.
