  • 2 pounds red potatoes
  • 6 slices thick-cut bacon
  • 1 medium yellow onion

Directions

Step 1

Scrub the red potatoes thoroughly and place them in a large pot. Cover with cold water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and set aside to cool slightly.
