Ingredients

  • 2 cups strawberries
  • 1 cup blueberries
  • 1.5 cups green grapes
  • 1 cup pineapple chunks
  • 3 whole kiwi
  • 1 whole orange
  • 2 tablespoons honey
  • 2 tablespoons fresh mint leaves

Directions

Step 1

Wash all the fruits thoroughly under cold running water. Pat them dry with a clean kitchen towel.

Step 2

Hull and slice the strawberries into quarters. Add them to a large mixing bowl.

Step 3

Add the blueberries to the bowl as is, no need to slice them.

Step 4

Cut the green grapes in half and add them to the bowl.

Step 5

If using fresh pineapple, peel, core, and cut it into bite-sized chunks. If using canned pineapple, drain it well before adding the chunks to the bowl.

Step 6

Peel the kiwi and slice it into thin rounds or bite-sized pieces. Add them to the bowl.

Step 7

Zest the orange using a microplane or fine grater. Set the zest aside. Then, juice the orange and pour the juice into a small mixing bowl or measuring cup.

Step 8

Whisk the honey into the orange juice until well combined. Add the orange zest for extra flavor.

Step 9

Pour the honey-citrus dressing over the mixed fruits in the large bowl. Gently toss everything together using a large spoon to coat the fruit evenly.

Step 10

Finely chop the fresh mint leaves and sprinkle them over the salad for a burst of freshness. Give the salad one final gentle toss.

Step 11

Serve immediately or cover and refrigerate for up to 2 hours to allow the flavors to meld together. Enjoy your Mom's Fruit Salad chilled!
