Ingredients

  • 4 medium-sized (sliced 1/4 inch thick) green tomatoes
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup all-purpose flour
  • 0.5 cup cornmeal
  • 0.25 cup breadcrumbs
  • 0.5 teaspoon paprika
  • 0.5 cup buttermilk
  • 1 large (beaten) egg
  • 1 cup (for frying) vegetable oil

Directions

Step 1

Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides of the slices with salt and pepper, then set aside for a few minutes to help draw out moisture.

Step 2

Prepare a dredging station with three shallow bowls. In the first bowl, mix the all-purpose flour and paprika. In the second bowl, combine the buttermilk and beaten egg. In the third bowl, mix the cornmeal and breadcrumbs.

Step 3

Dip each tomato slice into the flour mixture, coating it evenly, then dip it into the buttermilk mixture, and finally coat it in the cornmeal-breadcrumb mixture. Set each coated slice aside on a plate.

Step 4

Heat the vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C). To test, drop a small crumb in the oil—it should sizzle but not burn.

Step 5

Carefully place a few tomato slices into the hot oil in a single layer, being careful not to overcrowd the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Step 6

Remove the fried green tomatoes from the skillet and place them on a plate lined with paper towels to drain excess oil. Repeat with the remaining slices.

Step 7

Serve the fried green tomatoes warm as a side dish, appetizer, or snack. They pair wonderfully with a dipping sauce like remoulade or ranch!
