Ingredients

  • 400 g linguine or spaghetti
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic cloves, minced
  • 250 g large shrimp, peeled and deveined
  • 200 g scallops
  • 500 g mussels, scrubbed and de-bearded
  • 100 ml dry white wine
  • 200 ml heavy cream
  • 50 g grated Parmesan cheese
  • 2 tbsp parsley, finely chopped
  • 0.5 tsp crushed red pepper flakes (optional)
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 lemon, cut into wedges

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine or spaghetti according to the package instructions. Reserve 1 cup of pasta water before draining. Drain and set aside.

Step 2

In a large skillet or frying pan, heat the olive oil and butter over medium heat until the butter is melted.

Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.

Add the shrimp and scallops to the skillet. Cook for 2–3 minutes on each side, or until the shrimp turn pink and the scallops are golden brown and cooked through. Remove them from the skillet and set aside.

In the same skillet, add the mussels and pour in the white wine. Cover with a lid and let them steam for 4–5 minutes, or until the mussels open. Discard any that do not open.

Return the cooked shrimp, scallops, and drained pasta to the skillet. Toss gently to coat the pasta in the sauce, adding a splash of the reserved pasta water if needed to loosen the sauce.
