Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold, cut into cubes)
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 6 tablespoons Ice water
  • 4 cups Fresh or frozen cherries (pitted)
  • 1 cup Granulated sugar (for filling)
  • 0.25 cup Cornstarch
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt (for filling)
  • 1 Egg (beaten, for egg wash)
  • 2 teaspoons Coarse sugar (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour, salt, and sugar for the crust.

Step 2

Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing just until the dough holds together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

Preheat your oven to 400°F (200°C).

Step 5

In a medium saucepan, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt for the filling. Cook over medium heat, stirring frequently, until the mixture thickens and bubbles. Let it cool slightly.

Step 6

On a floured surface, roll out one disc of the dough into a 12-inch circle. Transfer it to a 9-inch pie dish, pressing it gently into the bottom and sides.

Step 7

Pour the cherry filling into the prepared crust.

Step 8

Roll out the second disc of dough and cut it into strips to create a lattice top, or leave it whole for a full top crust. If using a full top crust, make slits for steam to escape.

Step 9

Trim and crimp the edges of the crust as desired. Brush the top crust with the beaten egg and sprinkle with coarse sugar, if using.

Step 10

Place the pie on a baking sheet to catch any drips and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 11

Let the pie cool completely on a wire rack before serving, about 2-3 hours, to allow the filling to set.

Step 12

Slice and enjoy your Mom's Fantastic Cherry Pie!
