Ingredients

  • 6 medium russet potatoes
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 0.25 cup butter
  • 1 can cream of chicken soup
  • 1 small, diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup bread crumbs
  • 2 tablespoons olive oil

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes, then boil them in a large pot of salted water for 10-12 minutes, or until tender. Drain and set aside.

Step 2

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with butter or cooking spray.

Step 3

In a large mixing bowl, combine the sour cream, shredded cheddar cheese, melted butter, and cream of chicken soup. Mix well until smooth.

Step 4

Add the diced onion, garlic powder, salt, and black pepper to the mixture. Stir to combine evenly.

Step 5

Gently fold the cooked potatoes into the mixture, ensuring all pieces are coated with the creamy mixture.

Step 6

Transfer the potato mixture into the greased casserole dish and spread it out evenly.

Step 7

In a small bowl, mix the bread crumbs with olive oil until the crumbs are evenly coated. Sprinkle the bread crumb mixture over the top of the casserole.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and bubbling.

Step 9

Remove from the oven and let cool for 5-10 minutes before serving. Enjoy!
