Ingredients

  • 18 sheets Graham crackers
  • 2.5 cups Whole milk
  • 0.75 cups Granulated sugar
  • 3 tablespoons All-purpose flour
  • 0.25 teaspoons Salt
  • 3 large Egg yolks
  • 1 teaspoons Vanilla extract
  • 2 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 2 tablespoons Powdered sugar

Directions

Step 1

In a medium saucepan, whisk together the granulated sugar, flour, and salt.

Step 2

Gradually add the milk, stirring continuously to combine. Heat over medium heat, stirring frequently, until the mixture begins to thicken and bubbles appear, about 5-7 minutes.

Step 3

In a small bowl, beat the egg yolks. Slowly temper the yolks by adding a few tablespoons of the heated milk mixture to the yolks while stirring constantly.

Step 4

Pour the tempered yolks into the saucepan and continue to cook, stirring constantly, for another 2 minutes until the custard is smooth and thick.

Step 5

Remove the saucepan from heat and stir in the vanilla extract and butter until fully incorporated. Let the custard cool to room temperature, stirring occasionally to prevent a skin from forming.

Step 6

In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cooled custard to create a light and fluffy filling.

Step 7

In a 9x13-inch dish, arrange a single layer of graham crackers along the bottom.

Step 8

Spread 1/3 of the custard mixture evenly over the graham crackers. Add another layer of graham crackers on top, followed by another 1/3 of the custard. Repeat the layering process one more time, ending with the custard on top.

Step 9

Cover the dish with plastic wrap and refrigerate for at least 6 hours or overnight to allow the graham crackers to soften and the flavors to meld.

Step 10

Serve chilled and enjoy a slice of Mom’s Famous Graham Cracker Cake with family and friends!
