Ingredients

  • 1 large head cauliflower

  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper
  • 0.25 teaspoon (optional) nutmeg
  • 2 tablespoons (chopped for garnish) fresh parsley
  • 0.5 cup (optional for topping) croutons

Directions

Step 1

Cut the cauliflower into small florets and discard the tough stem and leaves.

Step 2

In a large pot, heat the olive oil and butter over medium heat until the butter melts.

Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent.
