Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1.5 cups enchilada sauce
  • 1 4-ounce can diced green chilies
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon vegetable oil
  • 0.5 cup black olives, sliced (optional)
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat.

Step 4

Stir in the minced garlic, green chilies, and 1 cup of the enchilada sauce. Cook for another 2-3 minutes. Remove from heat.

Step 5

Spread a thin layer of enchilada sauce (about 1/4 cup) on the bottom of the baking dish.

Step 6

Place 4 corn tortillas in the dish, overlapping slightly to cover the bottom.

Step 7

Spread half of the meat mixture over the tortillas, then sprinkle 1 cup of shredded cheddar cheese over the meat.

Step 8

Add another layer of 4 tortillas on top, followed by the remaining meat mixture and another 1 cup of shredded cheese (mixing cheddar and Monterey Jack).

Step 9

Top with the final 4 tortillas. Pour the remaining 1/4 cup of enchilada sauce evenly over the top and sprinkle with the remaining cheese.

Step 10

Optional: Add sliced black olives on top for garnish before baking.

Step 11

Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Step 12

Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh cilantro, if desired.

Step 13

Serve warm and enjoy your delicious Mom's Enchilada Casserole!
