Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat.
Stir in the minced garlic, green chilies, and 1 cup of the enchilada sauce. Cook for another 2-3 minutes. Remove from heat.
Spread a thin layer of enchilada sauce (about 1/4 cup) on the bottom of the baking dish.
Place 4 corn tortillas in the dish, overlapping slightly to cover the bottom.
Spread half of the meat mixture over the tortillas, then sprinkle 1 cup of shredded cheddar cheese over the meat.
Add another layer of 4 tortillas on top, followed by the remaining meat mixture and another 1 cup of shredded cheese (mixing cheddar and Monterey Jack).
