Ingredients

  • 6 pieces large eggs
  • 0.5 cup mayonnaise
  • 1 tablespoon mustard
  • 1 piece celery stalk
  • 0.25 cup red onion
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with water until they're submerged by about 1 inch.

Step 2

Bring the water to a boil over medium heat. Once boiling, cover the saucepan, turn off the heat, and let the eggs sit for 9-12 minutes.

Step 3

While the eggs are cooking, finely chop the celery and red onion. Set aside.

Step 4

After the eggs are done cooking, transfer them to a bowl of ice water to cool for 5 minutes. This helps make peeling easier.

Step 5

Gently peel the eggs and roughly chop them into small pieces.

Step 6

In a large mixing bowl, combine the mayonnaise, mustard, salt, and black pepper. Mix well until smooth.

Step 7

Add the chopped eggs, celery, and red onion to the bowl with the mayonnaise mixture. Fold everything together gently to avoid mashing the eggs too much.

Step 8

Taste and adjust seasoning if needed with more salt or pepper.

Step 9

Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld. This step is optional but recommended.

Step 10

Serve the egg salad chilled as a sandwich filling, on crackers, or as a side. Garnish with paprika if desired.
