Ingredients

  • 6 medium Russet potatoes
  • 4 large Hard-boiled eggs
  • 1 cup Mayonnaise
  • 2 tablespoons Yellow mustard
  • 2 stalks Celery
  • 0.25 cup Red onion
  • 2 tablespoons Pickle relish
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika

Directions

Step 1

Peel the potatoes and chop them into bite-sized pieces (about 1-inch cubes).

Step 2

Place the potato pieces in a large pot and cover with cold water. Add a pinch of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Cook the potatoes for 10-15 minutes, or until they are fork-tender but not falling apart.

Step 4

While the potatoes are cooking, prepare the hard-boiled eggs. Peel the eggs and roughly chop them into small pieces.

Step 5

Finely dice the celery and red onion. Set them aside.

Step 6

Once the potatoes are cooked, drain them and transfer them to a large mixing bowl. Allow them to cool for about 10 minutes.

Step 7

In a small bowl, whisk together the mayonnaise, yellow mustard, pickle relish, salt, and black pepper to make the dressing.

Step 8

Gently fold the chopped eggs, celery, and red onion into the potatoes.

Step 9

Pour the dressing over the potato mixture and gently stir until everything is evenly coated.

Step 10

Sprinkle the paprika on top for garnish.

Step 11

Cover the salad with plastic wrap and chill it in the refrigerator for at least 1 hour before serving to allow the flavors to meld.

Step 12

Serve cold or at room temperature as a side dish. Enjoy!
