  • 15 oz enchilada sauce

  • 10 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • None optional toppings: sour cream, sliced avocado, chopped cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, add the olive oil. Once heated, add the diced onion and sauté for 3-4 minutes until softened.

Add the ground beef (or turkey) to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess grease if necessary.

Stir in the ground cumin, chili powder, garlic powder, and salt. Mix well to combine.
