Ingredients

  • 6 medium-sized Russet potatoes
  • 1 medium-sized Yellow onion
  • 2 cups Shredded cheddar cheese
  • 1.5 cups Heavy cream
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Wash, peel, and thinly slice the potatoes into 1/8-inch thick rounds. For even cooking, try to keep the slices uniform.

Step 2

Peel and chop the onion into thin slices. If preferred, you can dice the onion finely.

Step 3

Grease the inside of your crock pot or slow cooker with 1 tablespoon of the butter to prevent sticking.

Step 4

Layer one-third of the sliced potatoes in the bottom of the crock pot, followed by one-third of the sliced onions.

Step 5

Sprinkle about one-third of the shredded cheddar cheese over the potato and onion layer, followed by a light dusting of garlic powder, salt, and black pepper.

Step 6

Repeat the layering process twice more with the remaining potatoes, onions, cheese, and seasonings, making sure to finish with a layer of cheese on top.

Step 7

Pour the heavy cream evenly over the layers in the crock pot, ensuring it reaches all parts of the dish.

Step 8

Cut the remaining tablespoon of butter into small pieces and scatter them over the top of the final cheese layer.

Step 9

Cover the crock pot with its lid and set it to LOW heat. Cook for approximately 4-5 hours, or until the potatoes are fork-tender and the cheese is bubbly and golden on top.

Step 10

Once cooked, allow the dish to sit for 5-10 minutes to set before serving.

Step 11

Garnish with freshly chopped parsley if desired, and serve warm as a side dish.
