Ingredients

  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 28 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned pinto beans, drained and rinsed
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional, for extra heat)
  • 1 cup Shredded cheddar cheese (for serving)
  • 0.5 cup Sour cream (for serving)
  • 0.25 cup Chopped green onions (for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Drain excess fat if necessary.

Step 3

Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Stir in the chili powder, ground cumin, paprika, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.

Step 5

Add the canned diced tomatoes, tomato paste, kidney beans, pinto beans, and beef broth. Stir until all ingredients are well combined.

Step 6

Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 30 minutes, stirring occasionally to prevent sticking.

Step 7

Taste and adjust seasoning, adding more salt or spices as needed.

Step 8

Serve hot with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped green onions for garnish.
