Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 15-ounce can diced tomatoes (with juice)
  • 1 8-ounce can tomato sauce
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water or low-sodium beef broth
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 2 stalks green onions, sliced (optional, for topping)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes. Drain off excess fat if necessary.

Step 3

Add the diced onion and minced garlic to the pot. Cook, stirring occasionally, until the onion is softened, about 3-4 minutes.

Step 4

Stir in the diced tomatoes with their juice, tomato sauce, kidney beans, black beans, chili powder, cumin, paprika, salt, black pepper, and water or beef broth.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for about 20 minutes, stirring occasionally to prevent sticking.

Step 6

Taste the chili and adjust the seasoning, if needed. Add more salt, chili powder, or cumin for extra flavor.

Step 7

Serve the chili hot in bowls. If desired, top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of sliced green onions.
