Ingredients

  • 2 pieces Chicken breasts (boneless, skinless)
  • 8 cups Chicken broth
  • 2 cups Flour
  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Butter (unsalted)
  • 1.25 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parsley (chopped, optional)

Directions

Step 1

Begin by cooking the chicken. Add the chicken breasts and 8 cups of chicken broth to a large pot. Bring to a boil, then lower the heat to a simmer. Let the chicken cook for 20-25 minutes or until fully cooked through.

Step 2

While the chicken cooks, prepare the noodles. In a large mixing bowl, combine the flour and 1 teaspoon of salt. Make a well in the center and crack the eggs into it.

Step 3

Add the milk to the eggs and whisk with a fork, gradually incorporating the flour to form a dough.

Step 4

Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic. Cover with a clean towel and let it rest for 10 minutes.

Step 5

On a floured surface, roll out the dough to about 1/8-inch thickness. Use a pizza cutter or sharp knife to cut the dough into thin noodle strips (approximately 1/4-inch wide). Let the noodles dry slightly while you finish the chicken.

Step 6

Once the chicken is cooked, remove it from the pot and shred it into bite-sized pieces using two forks. Reserve the broth in the pot.

Step 7

Add the shredded chicken back to the pot of broth. Stir in 1 tablespoon of butter, the remaining 1/4 teaspoon of salt, and the black pepper. Bring the mixture back to a gentle boil.

Step 8

Drop the noodles into the boiling broth a few at a time, stirring so they don’t stick together. Let the noodles cook for 7-10 minutes, or until soft and tender.

Step 9

Taste and adjust seasoning if needed. Serve hot, garnished with chopped parsley if desired.
