  • 8 pounds bone-in spiral-cut ham
  • 1 cup brown sugar
  • 0.5 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 0.25 teaspoon ground cloves
  • 0.5 cup pineapple juice
  • 1 cup water

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the ham from its packaging and place it, cut side down, onto a roasting pan fitted with a rack.

Step 3

In a medium saucepan over medium heat, combine the brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and pineapple juice. Stir until the brown sugar has dissolved and the glaze is smooth, about 3–4 minutes. Remove from heat and set aside.

Step 4

Pour 1 cup of water into the bottom of the roasting pan to help create steam and keep the ham moist during cooking.

Step 5

Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for about 10 minutes per pound, or until the internal temperature reaches 130°F (54°C), about 1 hour and 20 minutes for an 8-pound ham.

Step 6

Remove the ham from the oven, uncover it, and brush the glaze generously over the entire surface of the ham.

Step 7

Return the ham to the oven, uncovered, and increase the oven temperature to 375°F (190°C). Bake for an additional 20–30 minutes, basting with the glaze every 10 minutes, until the ham is caramelized and the internal temperature reaches 140°F (60°C).

Remove the ham from the oven and let it rest for 10–15 minutes before slicing.
