  • 3 cups All-purpose flour
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 pound Ground pork
  • 3 stalks Green onions, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 cup Cabbage, finely chopped
  • 1 Egg
  • 2 tablespoons Vegetable oil (for frying)
  • 1 cup Water (for steaming)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water, stirring with a wooden spoon until a shaggy dough forms.

Step 2

Turn the dough out onto a floured surface and knead for about 8-10 minutes, until the dough becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Step 3

While the dough is resting, prepare the filling. In a bowl, mix together the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, finely chopped cabbage, and the egg. Stir until well-combined. Set aside.

Step 4

After the dough has rested, divide it into four equal pieces. Roll each piece into a thin log and cut into 12 small pieces, resulting in about 48 pieces total.

Using a rolling pin, roll each small piece into a thin circle, roughly 3 inches in diameter. Keep the unused dough covered with a damp towel to prevent drying.

Place about 1 tablespoon of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape. Press the edges together firmly, pleating as you go, to seal the dumpling.

Step 7

Heat 2 tablespoons of vegetable oil in a large, non-stick skillet over medium-high heat. Place the dumplings flat side down and cook for 2-3 minutes until the bottoms are golden brown.

Step 8

Carefully add 1/4 cup of water to the skillet and cover immediately to steam the dumplings. Cook for 8-10 minutes or until the water has evaporated and the dumplings are fully cooked.

Step 9

Repeat the process with the remaining dumplings, adding more oil as needed.

Step 10

Serve hot with your favorite dipping sauce, such as soy sauce mixed with a dash of vinegar and chili oil.
